Pasta with Tomatoes, Basil, and Garlic

Last night we made one of my favorite pasta dishes. It is simple, quick, light, and well-liked by most people. We found the recipe on the back of a package of pasta and have since made a few changes.

Pasta with Tomatoes, Basil, and Garlic

serves 6 to 8

1 pound long thin pasta
4 Tbsp olive oil
3-4 cloves garlic, minced
1 tsp dried basil
2 28-ounce cans diced tomatoes, slightly drained
3/4 cup white wine
5 Tbsp grated Parmesan
salt and pepper to taste

  • Cook pasta a minute or two less than package directions.
  • Meanwhile heat olive oil in a skillet.
  • Add garlic and basil and cook for a minute.
  • Add tomatoes, salt, and pepper. Cook for three minutes.
  • Add hot pasta to skillet and toss well.
  • Add white wine and continue cooking until the pasta is done.
  • Toss with Parmesan cheese. Serve.
